Preheat oven to 375
Dissolve instant coffee in boiling water ad set aside to cool (can scramble eggs if added boiling).
Beat butter, sugars and vanilla in large bowl at medium speed until fluffy.
Add eggs, and coffee.
Beat well until blended
Combine flour, baking soda, cinnamon, salt and nutmeg in medium bowl; gradually add in to butter mixture, beating at low speed until well blended. Stir in chocolate chips.
Drop dough by heaping tablespoonfuls 2 inches apart onto un-greased cookie sheets.
Bake 8-10 minutes or until set.
Let stand on cookie sheets 1 minute, transfer to wire racks to cool completely.
Makes about 3 1/2 dozen cookies.
