Season chicken on both sides and grill, turning once until cooked through. Slice each ciabatta roll and drizzle with olive oil. Place face down on grill pan and grill until slightly toasted. Turn over and place a few leaves of fresh basil on bottom roll. Top with tomato slices, mozzarella cheese and cooked chicken breast. Cover with top of roll and place weight on sandwiches. if you don't have a weight, you can press firmly with spatula during grilling. Continue to grill, flipping once until cheese is melted. Remove from grill pan, slice and enjoy!
Season according to you taste. Serve with grilled vegetables.
