Balsamic marinated tomato and mozzarella with Israeli couscous
Combine Tomatoes, Mozzarella, Onion, Garlic, Basil, Balsamic Vinegar, Olive Oil, Salt and Pepper in a suitable bowl or jug. Mix well and refrigerate for 20 to 30 minutes.
Place couscous in a pyrex dish. Bring water to boil and add to couscous. Cover with cling wrap and leave stand for 10 Minutes. Remove cling wrap and fluff with fork. Allow to cool.
Add tomato and cheese mixture to couscous and lightly toss to mix.
