Combine oil and sugar. Beat in eggs one at a time, beating well after each addition. Combine all dry ingredients and add to the batter.Fold in apples, walnuts, and the vanilla. Pour into a greased tube pan or bundt pan. Bake at 325? for an hour and a half or until toothpick inserted in the center comes out clean.
While the cake is baking, construct a double boiler. Add butter, half-and-half, and brown sugar. Heat just until sugar melts. Let cool until room tempature. Whisk in confectioners sugar and drizzle over cooled cake. Garnish with more walnuts if desired.
