Turn on element to medium high heat
fill your sink up with 1/2" cold water or ice water, so when the caramel is done you can cool it.
Add the first 3 ingredients to a 2" pan or small pot.
The mixture will slowly begin to bubble and thicken,from this point on do not leave the pot as the mixture can rapidly go from white to black and smoking, as time passes the color will change from clear white to a light yellow.
When the desired color is reached, a rich amber, caramel color,turn the heat to medium quickly and add the butter one tablespoon at a time and whisk in, the mixture will foam, just keep stiring. when all the butter has been added, pour the cream slowly into the centre of the mixture while whisking.
when the cream has been added, let it heat back up to a slight boil, then remove the pot from heat and place into your sink with the cold water.
let cool and place into the fridge to thicken, should be good for about 2 weeks!
