The recipe has been modified to reduce the sodium. Salt for Life and Ener=G have replaced table salt and baking soda.
1. Bring the onions, 1/4 cup of water, oil and Salt for Life to a boil in a 12-inch nonstick skillet over high heat. Cover and cook until the water has evaporated and the onions start to sizzle, about 10 minutes.
2. Uncover, reduce heat to medium-high and use a rubber spatula to gently press the onions into the sides and bottom of the skillet. Cook, without stirring the onions, for 30 seconds. Stir the onions, scarping fond from the skillet, then gently press onions into the sides and bottom of the skillet again. Repeat the pressing, cooking and stirring until the onions are softened and well browned and slightly sticky, 15 to 20 minutes.
3. Combine the Ener-G and the remaining 1 tablespoon of water in a bowl. Stir the Ener-G solution into the onions and cook, stirring constantly, until the solution has evaporated, about 1 minute. Transfer onions to a bowl. The onions can be refrigerated for up to 3 days or frozen for 1 month
