Heat oven to 350. Butter a 9-inch cake or pie pan.
Cut the half-pineapple lengthwise into 4 wedges, cut the core from each wedge and cut each wedge lengthwise again to make wedges about 1" wide and then each cross-wise into 1/2 inch slices.
Put butter in a large frying pan (Ideally large enough to hold the pineapple slices in one layer) over medium-hi heat. When it sizzles, add pineapple. give the pan a shake and let the pineapple release its juices without stirring. Let the liquid bubble and evaporate, giving the pineapple only the occasional shake / stir. When most of the liquid has evaporated (~5 minutes), add brown sugar and stir again. Let the sugar bubble for about 30 seconds and then remove the pan from the heat. Transfer pineapple to the prepared cake pan with a slotted spoon . Reserve the juices in the pan.
In a large bowl, whisk eggs & sugar until lightly frothy and the sugar is dissolved. Sprinkle or sift in flour and whisk until smooth. Add cream, vanilla, and rum - whisk again. Finally, add reserved juices from the pineapple and stir.
Pour the batter over the pineapple. Bake in the pre-heated oven until evenly puffed and golden and a skewer comes out clean, about 50 minutes.
Serve warm.
Don't over-mix the batter. Clafoutis works with many fruits but adapt the batter to the fruit - Rich creamy batter for acidic fruit (like pineapple), lighter batter for sweeter fruits (pears, figs). French cooks add a liquor to complement the fruit (Poire William-pear; Armagnac - prunes, Calvados-apples, rum- pineapple), and add seasoning to the batter like cinnamon, nutmeg, cardamom, vanilla.
