Preheat oven to 300F.
Line a baking sheet with parchment paper and spray with cooking spray. Wash and dry grapes thoroughly. Set aside.
In a food processor, grind pistachios to a fine crumble. Set aside.
In a small saute pan over low heat, mix grapeseed oil, honey, brown sugar, cinnamon and salt for about 30 seconds or until sugar is dissolved. Remove from heat and add the pistachios to the mixture. Stir to coat.
Place the pistachio mixture on the baking sheet and spread out evenly. Bake for 8 minutes, stir and return to oven for another 5 minutes until pistachios are caramelized. Remove from the oven and let cool completely on the counter or in the refrigerator for 10 minutes.
Take a scant tablespoon of goat cheese and place in your hand. Push a grape grape into the center and roll between both hands until you have an evenly coated ball. Roll ball in the caramelized pistachios to create a thin crust. Refrigerate or serve immediately.
