This is delicious.
Heat half the oil in a wok over a high heat until just smoking.
Add one-quarter of the pork and stir-fry for 2-3 minutes or until golden brown.
Transfer to a plate.
Repeat in 3 batches with remaining pork.
Heat remaining oil in the wok over medium heat. Add onion and stir-fry for 2-3 minutes.
Add garlic and stir-fry for a minute or until aromatic.
Add soy sauce, sugar and fish sauce and stir to combine.
Simmer for 5-6 minutes or until sauce reduces and becomes syrupy.
Return pork to wok with limejuice and stir to combine.
Spoon stir-fry evenly among serving plates.
Serve immediately with bok choy, lime wedges and rice, or mash, if desired.
