1. Line an 8x8x2" or 9x9x2" baking pan with foil, extending over the edges of the pan. Butter the foil.
2. In a 3-qt heavy saucepan, melt butter over low heat. Add brown sugar, 1/2 and 1/2, and corn syrup. Mix well. Cook and stir over medium-high heat until mixture boils.
3. Reduce heat to medium. Continue boiling at moderate steady rate, stirring frequently, until thermometer registers 248ºF (45-60 minutes).
4. Remove from heat. Stir in vanilla. Pour into prepared pan. When firm, use foil to lift out of pan. Use a buttered knife to cut into 1" squares. Wrap in waxed paper. Store up to 2 weeks.
