Soft caramels made from scratch.
Use the stick of Butter to grease a 9 x 13 pan. Make sure entire surface is covered to prevent any sticking.
Mixture 1
Combine Sugar, Karo Syrup and Salt in a large pot on medium heat. Stirring continually heat the mixture till boiling point. Uncover, stir and heat till the mixture spins a thread. Then add stick of butter and stir till melted.
Mixture 2
While cooking mixture 1, combine Whipping Cream and Sweetened Condensed Milk in a separate pot. Heat on low, stirring occasionally and making sure it doesn't burn.
Combine mixture 2 after the butter melts to mixture 1 slowly so that mixture one does not stop boiling. Stir continually until the color starts to darken. Then use the cold water trick to form balls and cook till the consistency is correct. Once correct quickly transfer the mixture to the 9 X 13 pan. Be careful not to scrape any caramel that is starting to burn on the bottom of the pot into the pan.
