Combine baking mix, salt and pepper in shallow bowl. Place croutons and eggs in two additional shallow bowls. Cut chicken breasts in 1 inch strips. Dip into baking mix, eggs, and then croutons. Place on baking sheet; drizzle with butter. Bake at 450 for 10- 12 minutes, turning once.
