Sauté onion and pepper in 12" dutch oven until tender. Remove from grease and set aside. Pour beaten eggs into oven, cover and cook for 3-5 minutes. Mix together onion, avocados, tomatoes, bacon and 1/2 the cheese. Spread over the eggs and fold over. Sprinkle remaining cheese over the top if desired. Cut in slices and serve with rolls or tortillas.
