This is an easy and different treatment for a boneless, pork loin roast.
Combine the oil, pepper, cinnamon, and nutmeg; rub over roast. Place roast on a rack in a shallow roasting pan. Bake at 350 degrees for 1-1/2 to 2 hours or until a meat thermometer reads 160. Let stand for 10 minutes before slicing.
