Tender chunks of pork braised in an intense, richly flavored red chile sauce.

1. Adjust oven rack to lower-middle position and heat oven to 325 degrees. Combine hot coffee and raisins in small bowl, cover, and let sit until raisins are plump, about 5 minutes. Combine chili powder, flour, and oregano in second small bowl. Pat pork dry with paper towels and season with salt and pepper.
2. Heat 1 tablespoon oil in Dutch oven over medium-high heat until just smoking. Brown half of pork on all sides, 7-10 minutes; transfer to medium bowl. Repeat with 1 tablespoon oil and remaining pork.
3. Pour off all but 2 tablespoons fat from the pot and reduce heat to medium. Add onions and cook until softened, about 5 minutes. Stir in garlic and chipotle and cook until fragrant, about 30 seconds. Stir in chili powder mixture and remaining 1 tablespoon oil and cook, stirring constantly, until fragrant, about 1 minute (do not let spices burn). Stir in broth, water, and raisin coffee mixture, scraping up and browned bits.
4. Process sauce in blender until smooth. 1 to 2 minutes. Return sauce to now-empty pot. Stir in pork and any accumulated juices and bring to simmer. Cover, transfer pot to oven, and cook until pork is tender and sauce is thickened, about 2 hours, Stirring halfway through cooking.
5. Remove pot from oven and stir in cilantro and lime zest and juice. Season with salt and pepper to taste. Serve
