This is a hearty beef and potatoe stew that is served over rice. Bursting with flavor, but not spicy at all.
Cook beef in crock pot with 1 cup of water or broth on low for 8 hours. Shred or chop meat into small peices. (or cook beef as preferred)
Sautee the onion in oil until translucent.
Add garlic and cook for about a minute
Add beef to the onion and garlic. Stir.
Add Cumin, Oregano, salt and pepper. Stir
Add Beef broth, tomatoes and water. Stir
Add potatoes. Stir
Add green olives and bay leave.
Simmer until potatoes are done, remove bay leaves and serve over rice.
