Important use Top sirloin beef or this recipe will need to be slow cooked all day.
Heat oil in large pan (cast iron) over medium high heat. Cook beef until evenly brown. Stir in beef broth rotel tomatoes. Add all other ingredients except corn starch. Bring to just boil reduce heat simmer for 30-45 mins or until beef is tender
Dissolve corn starch in water, and stir into stew until thick about 3 mins
Serve over rice or on tortillas
If any other meat is used add lots of simmering time or use crock pot on low for 10 hrs
