This recipe is a healthy, vegan alternative to the sugary, unhealthy Girl Scout treat so loved by many of us. (Girl Scouts...MOVE OVER!)
Grind nut mixture finely using a coffee mill or similar grinder.
Melt carob chips with mint oil and coconut oil in a small double boiler on medium heat.
Mix in ground nut mixture.
Drop by the teaspoonful onto waxed paper (OR the tablespoonful for a little larger mint).
Chill 10 minutes in freezer.
Bag and keep refrigerated
