Clean carrots, cover with ice in a bowl and refrigerate for 1/2 hour. Grate carrots into a bowl and add raisins, (nuts if desired) lemon juice and sour cream. Mix well and serve on a lettuce leaf. N: If using sour cream or yogurt, you may prefer a sprinkling of sugar into the mix. Recipe by Mangia!
