This is always a winner at my parties. This is the type of cake that your friends will ask you to make over and over again. Enjoy!
Preheat oven to 350 degrees.
Grease and line with parchement paper, 3 round cake pans.
Place sugar and oil in a bowl and mix at low speed. Add eggs one at a time, beating well after each addition. Set aside.
Put flour, baking soda, baking powder, salt and cinnamon in a bowl and mix together. Add the sugar mixture and thoroughly combine. Stir in carrots, nuts, pineapple until well combined.
Equally, put mixture in pans. Bake for 30 minutes. Let cool for 15 minutes. remove the cakes from the pans and let cool completely on wire racks.
To make the icing, place butter and cream cheese in a bowl of an electric mixture or beat with hand held elctric mixture. Gradually add the sugar and vanilla, mix until frosting is smooth.
Place a cake layer on a serving dish and spread with frosting. Cover the second layer as well. Place the last layer and frost the whole cake. Decorate with pecans.
