The best carrot cake you will ever put in your mouth!
Preheat oven on 325 degrees
Cake Mixture:
Beat together sugar, eggs, oil and cinnamon.
In separate bowl, sift or thoroughly mix soda, baking powder, salt and flour
Add the flour mixture to the egg mixture and beat together.
Stir in the carrots and vanilla.
Oil a 9x13 pan and pour in the cake mixture.
Bake for 40-50 minutes. Use a toothpick to test the middle for doneness.
Let the cake completely cool (approximately 2-4 hours) before icing the cake
Cream Cheese Frosting:
Whip up the butter and cream cheese, then gradually add the confectioners sugar. Next, add the vanilla and then the nuts.
