Gorgeous Carrot Cake from Odlums
1. Preheat oven to 180 C; Grease line a cake tin.
2. Beat melted butter, brown sugar, granulated sugar and eggs in a large bowl.
3. Beat on a medium speed until creamy. Add the mandarins, vanilla essence and orange rind and combine well.
4. Reduce the speed to low and add the flour and cinnamon.
5. Add the coconut, carrots and chopped walnuts and mix well.
6. Transfer to a the baking tin and bake for c. 40-50 minutes until firm to touch.
7. Combine the icing sugar, butter (50g) , cream cheese and vanilla and beat until smooth and spread over the cake when cooled.
8. Sprinkle with walnuts.
