Pre heat oven to 350F /180?C/Gas 4
Sift flour, baking powder, baking soda, salt and cinnamon then set aside
Combine sugar and oil in a large bowl and beat well with an electric mixer. Add flour mixture (a half at at time, alternating with the egg). Beat well after each addition.
Add carrots and nuts.
Place batter in a 8?" round, greased cake tin.
Bake for 1 hr.
Cool before storing. May be frozen
