Applesauce replaces some of the oil, making this cake firm and hearty. Fabulous favor!
1. Preheat oven to 350 degrees. Grease and flour a 9x13-inch baking pan.
2. In a large bowl, mix together the eggs, oil and applesauce. Add the sugars. In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon and salt. Gradually add this mixture to the egg mixture, stirring intermittently. Once all of the dry ingredients are moistened, add the grated carrots, vanilla and nuts (if using). Pour into the prepared pans, and bake for 40-50 minutes or until a toothpick comes out clean.
3. Meanwhile, make the frosting. In a large bowl with an electric mixer, beat together the cream cheese and butter. Mix in the powdered sugar. Add the vanilla; beat until smooth. Spread on the cooled cake.
The outside of the cake will look very brown when cooked just right, if you do not cook throughly the carrots will be crunchy and detrack from the cake.
