Grease and flour 9x13 baking pan or spray 10-inch Bundt pan with cooking spray. Coat the pan thoroughly with granulated sugar. Beat together brown sugar, oil and eggs. Stir in carrots. Blend together dry ingredients; stir into batter thoroughly. Add vanilla, raisins and nuts. Pour into prepared pan. Bake at 350 degrees for 30-35 minutes for 9x13 and 1 hour for Bundt cake or until cake tests done. Frost with Lemon Butter fluf frosting or Cream Cheese frosting.
NOTE: one cup drained crushed pineapple may be substituted for 1 cup of the grated carrot and 1 cup coconut may be added.
Cream Cheese frosting: Cream together 1 3 oz package softened cream cheese and 2 tablespoons butter until smooth. Gradually beat in 3 cups powdered sugar and 1 teaspoon vanilla. Beat until spreading consistency, adding cream or milk as needed.
Lemon Butter Fluff Frosting: In above recipe increase butter to 1/2 cup increase powdered sugar to 4 cups add in place of vanilla, 1 tablespoon lemon juice and 2 teaspoons grated lemon rind. Beat in 2 tablespoons cream.
