Cook and mash carrots and set aside.
fry onion and garlic until soft and mix together with all other ingredients.
Place in a greased 2 lb loaf tin and cover with foil and bake in oven Gas Mark 4 or 350 C fpr about an hour until done.
Nice hot or cold and can be frozen too.
Uncover 10 minutes from end of cooking time to brown off the top. Cool and preslice before freezing if there are just 2 of you and you want it for another meal sometime. Also great cold with pickles and sliced thinly cold in sandwiches etc.
