This recipe was given to me by my friend Danielle Patridge. She got it from a friend. It is always a hit everywhere we take it. We use it at Thanksgiving and Easter and for summer BBQ's
Cook carrots in boiling water. Place butter in souffle pan and put in the oven (heated to 350) to melt and grease the pan at the same time. After carrots are cooked, mash them and then add all the other ingredients (including melted butter). Place in oven and cook 30 - 45 min.
Make sure to use a sharp or flavorful cheese!
