These are really good!
Preheat oven to 350 degrees. Cream butter until fluffy; add sugar gradually, beating well after each addition. Mix in carrots, egg, vanilla, spices and orange rind. Sift flour with baking powder and salt and beat in gradually. Drop from a teaspoon 1 1/2 inches apart onto lightly greased baking sheets and bake 12-15 minutes until firm but not brown. Let cool about 1 minute on baking sheets, then transfer to wire racks to cool.
