Combine butter, golden syrup, water and brown sugar in a saucepan. Stir over medium heat until butter is melted and sugar dissolved. Bring to boil, remove from heat.
Stir in carrot and soda and stand for 30 minutes or until lukewarm.
Stir in sifted dry ingredients, beat until smooth.
Pour into well greased 25cm x 15cm (10in x 6in) loaf pan.
Bake in a moderate (350 F) oven for 45 minutes or until cooked when tested.
Stand 5 minutes before turning out onto a wire rack to cool.
This can be made in 2 smaller tins (25cm x 8cm) if preferred and reduce the cooking time to 30 minutes. If the cake begins to brown on top, place a piece of brown paper over it.
