* In a large saucepan, put butter and onions and cover, cook on low heat until onions are transparent, about 20-25 minutes.
* Add 4 cups of stock, carrots, potatoes, cinnamon, pepper and nutmeg, cover pot and cook until all vegetables are soft.
* Mash vegetables, then beat with a hand mixer until smooth.
* Add half and half and beat until mixed.
