Tofu 1-2-3
Preheat oven to 350F. Mist a 9x13-inch baking pan with nonstick cooking oil spray. Set aside.
Into a large bowl, sift together the flour, cinnamon, nutmeg, baking powder, and salt. Add the sugar and stir with a wire whisk. In a blender, combine the tofu, maple syrup, and oil and process until smooth. Pour the liquid ingredients into the dry ingredients and stir until combined.
Add the carrots, walnuts, and raisins and stir well. The mixture will be thick and sticky.
Transfer the mixture to the prepared baking pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven, cook, cut into squares, and serve as is. This can also be frosted
