Grease and flour a 9X5 loaf pan. Preheat oven to 325 degrees.
Beat the eggs, sugar and oil in a large mixing bowl until well blended. In a separate bowl combine the flour, baking powder, baking soda, salt and cinnamon until well mixed. Stir the flour mixture into the egg/sugar mixture. Stir in the carrots.
Pour into the prepared loaf pan and bake in the preheated 325 degree oven for 1 hour and 20 minutes. Cool in the pan on a rack for 10 minutes. Remove from the pan and cool completely on a rack.
