Cook carrots in boiling water for about 10 minutes. Drain and place carrots in a oven safe dish. Add butter honey and cinnamon to the carrots. Cook at 350 degrees for about 30 minutes or until a glaze (or thick sauce) appears. Take out of oven and serve with fresh parsley on top. OR NOT.
