Cook potatoes until very tender. Drain well. Mash with butter (can use more butter if needed).
Add other ingredients and beat until fluffy.
Put in a greased 2 qt dish.
Cover and bake at 350 degrees for 40-45mins.
Sprinkle with additional cheese if desired and put back in oven till cheese melts (5mins).
