Use Silpat baking sheet.
In a glass batter bowl, mix cashews, sugar and corn syrup. Microwave uncovered until light brown, 6 to 8 minutes. Stir halfway through.
Remove bowl from microwave (HOT!). Stir in butter and vanilla. Microwave 1-1/2 to 2 minutes more. Should be a caramel color.
Remove bowl from microwave. Add soda, stir quickly. Will be light and foamy. Carefully and immediately spread onto silpat on baking sheet. Cool, and break up into pieces.
