Quick easy and quite good
- In a bowl combine the chicken, cashews, scallion, and mayonnaise.
- Mix well.
- Add salt and pepper to taste.
- Divide the chicken salad evenly among 3 slices of bread.
- Top with the remaining bread slices.
- Cut each sandwich in half.
If making sandwiches up in advance spread slices of bread with a thin layer of butter before putting on the chicken salad.
