1. Mix all sauce ingredients in a bowl, set aside.
2. Over medium high heat, heat oil. Once hot, cook ginger and pepper for 2 minutes.
3. Add cashews and garlic. Stir constantly for 2 minutes.
4. Add cooked cubed chicken and stir for 2-3 minutes. Turn heat down to medium low and add sauce. Stir until well coated and chicken is heated through, 2-4 minutes.
