Chutnies are South Asian (Indian) condiments to add pizazz to meals. Cashews are a great ingredient but are especially subject to pesticide spraying in India and some other tropical countries. So be especially certain to buy organic or from a known source.

This recipe will be presented different ways in the demonstration.
With Cilantro and Parsley.
With Ciliantro or Parsley with toasted cumin
The other herb with Golden Spice.
Soak Cashews in water for at least an hour.
If soaked overnight or long time, soak in refrigerator.
Strain water and add to a blender with almost all of the ingredients. Retain the cashews and herb to add later.
Blend to puree stage..
Then add the cilantro and blend to a fine chop.
Then add the soaked cashews. And Blend. This is a choice point. You can blend to smooth or slightly chunky.
You substitute or add fresh or dried fruit that has been soaked.
Soak dried fruit for about an hour. If overnight, refrigerate.
Add the fruit with the green herbs if you want a puree.
Add after the herbs and before the cashews if you want a bit of chunkiness.
