Vegan Soup Thickener
Soak 1 cup cashews in water for at least 2 hours to soften.
Drain the cashews, place in a blender, and combine with 1½ cups of fresh water.
Blend until totally smooth.
Can add a pinch of salt or a touch of lemon juice, but it's not wholly necessary, since you'll be adding the cashew cream
to a flavorful soup.
The cashew cream thickens when refrigerated. Use a little water to thin it, if necessary.
