1.) Pulse soaked and drained cashews and stock until well combined. Add a pinch of nutmeg.
2.) In a saute pan, add olive oil and onions and saute until translucent
3.) Add garlic and saute for 1 minute more
4.) Add spinach in batches and saute until wilted
5.) Stir in cashew mixture (may not need all of it - please note how much is used so the recipe can be adjusted)
6.) Season with S & P
