Suggest a better descriptionEmpty the package of coleslaw mix into a large mixing bowl or Ziploc bag.
Roll and handful of the spinach into a tight mound on a work surface. Using a sharp knife, shred the spinach and add it to the coleslaw mix. Repeat until all the spinach is shredded.
In a cruet or jar, mix the sugar, ginger, salt, pepper, rice vinegar, sesame oil, soy sauce, and red-wine vinegar. Cover and shake to emulsify the dressing. Pour the dressing over the salad and allow the flavors to mingle and mellow for at least an hour. This can even be made a day in advance.
Just before serving, add the cashews and sunflower seeds and toss to combine.
