In a frying pan, carmelize onion and garlic in olive oil.
Add mushrooms and spices and saute.
Mix all dry ingredients in large bowl.
Beat eggs and stock and pour over dry mixture - mix in onions/mushrooms.
Place in casserole, Bake 350 for 35 - 40 minutes until puffy, set and golden.
