Make liquid seasoning
make dry rub
In 10 inch skillet over medium high heat - fry bacon until crisp, transfer to paper plate
put seasoned pork tenderlon in skillet and sear for bout 30 minutes a side
remove skillet from heat and pour liquid seasoning over pork
Put skillet in oven, turning once, for about 35 minutes
Make the dressing
Remove pork to cutting board and allow to rest
put skillet back on medium high heat, add red onion
cook, until soft and slightly crips, then transfer to a bowl
Place leaves on plate, top with onions, tomatoe, feta, pickled peaches and bacon
Slide tenderloin into medallions and arrange on top
drizle with derssing
