Sausages cooked to perfection in a cast iron skillet
Take sausages out of refrigerator 15 to 30 minutes before cooking.
Add 1 inch of water to skillet (I know! water in cast iron?) and set it over low heat for 5 minutes.
After 5 minutes turn the heat up to just below medium and wait another 5 minutes.
Add the sausages and poach for 20 minutes.
Transfer sausages to paper towel lined plate and set aside.
Pour the evil water out of the cast iron and wipe it dry, placing it back on the burner to finish drying.
Pat the sausages dry with paper towels and add 2 tablespoons butter to the skillet.
When the butter starts to brown, return the sausages to the pan and don't touch them!
Cook about 4 minutes and then they should easily be picked up and turned over to cook the other side 4 minutes.
Serve!
You don't want to try moving the sausages until they start to release themselves from the pan. If you try to move them before 3 or 4 minutes, they will stick and you will be left with an unhappy mess.
