Suggest a better descriptionPut 8 - 10 cast iron skillet on middle oven rack and preheat to 425.
Blend eggs, milk, flour, sugar and spice with whisk or food processor until smooth and slightly fluffy, 3 minutes or less. Remove skillet and add butter, swirling until melted, coating bottom and sides of pan. Pour batter into skillet and place in center of oven. Bake 20 minutes, adjust temperature to 300 and bake another 5 minutes.
If you want warmed toppings, pull from oven just before it is done, sprinkle on the toppings and but back in oven for up to 5 minutes.
Topping ideas: powdered sugar and lemon wedges, chopped fruit, syrup, honey or preserves, yogurt and nuts, bacon and cheddar, figs and gorgonzola, prosciutto and melon, mozzarella, tomatoes and basil, sauteed potatoes and onions, mushrooms, thyme and Parmesan.
NOTE: Cooking for a crowd, use ratio of 1/3 cup flour + 1/3 cup milk per egg and use a larger skillet or a muffin pan (shorten cooking time for individual Dutch babies)
