Preheat oven to 200 C.
Steam Cauliflower but do not over cook as it will be baked.
In a saucepan, melt butter and then add the flour to make a paste. Turn down the heat and slowly start adding the milk- it will go very thick at first. Take off the heat and loosen up with more milk and then return to the stove and repeat. Keep cooking until you get the desired consistency. Add some cheese if desired.
PLace the cauliflower in the baking dish and pour over sauce. Sprinkle cheese over the top and bake until golden brown.
