Cauliflower Grilled Cheese
Cut cauliflower into florets, process cauliflower in a food processor until the mixture resembles rice. In medium bowl, combine cauliflower, eggs, parmesan and oregano. Mix until evenly combined then season with salt and pepper. Heat a Large nonstick skillet over medium heat. Spray with cooking spray then scoop cauliflower into small patties on one side of pan. Cook until golden. Add cheese to one side of cauliflower patty and then top with another patty- cook until cheese is melted.
