Weight watchers 3 Pro points per serve
Boil steam or microwave potato and cauliflower (separately). Cut potato into 3cm pieces, cut cauliflower into florets.
Using a food processor, process drained cauliflower with skim milk and olive oil until smooth. Add potato and pulse for a few seconds or until smooth and combined. (do not over mix as potato will become sticky).
Stir in parmesan cheese. serve
