3. In instant pot, press saute high. Add bacon grease and then when hot, saute the onion, garlic and green onions.
4. Pour 1/2 cup chicken stock, add 2 bay leaves.
5. Cut cauliflower and potatoes and add to the pressure cooker.
6. Pour remaining stock and close lid and cook at high pressure for 5 min. Turn off the heat and allow 10 minutes natural release.
7. Open the lid, remove bay leaves. Use immersion hand blender to blend.
8. Add fish sauce and heavy cream and salt if needed.
