Suggest a better descriptionHeat a pan. Add 2 tsp oil to pan. Add leek, saute 1 min. Add salt, cook until leeks are softened. Add cauliflower, 1 cup and 6 tbs stock, and water. Bring to a boil, simmer until cauliflower is tender. Place cauliflower mixture in a blender. Blend until smooth. Return to pan. Stir in salt, milk, butter, and pepper. Keep warm. *Slice mushroom caps. Heat a skillet. Add remaining oil to pan. Add mushrooms, saute until browned. Add remaining stock, Worcestershire, and vinegar. Cook until liquid is syrupy. Spoon 1 cup soup into each of 4 bowls. Top each serving with 2 tbs mushroom mixture. SERVE with crackers & ENJOY.
